Chilaquiles red sauce recipe

Chilaquiles are basically corn tortilla pieces that are fried, cooked in salsa, and sprinkled with cheese. They are often served for breakfast with eggs and a side of beans or nopalitos.

This dish is found all throughout Mexico, and at its most basic, it consists of fried tortilla chips covered with a red or green salsa, which makes the chip soft. Chilaquiles are commonly served with a side of refried beans and are eaten quite regularly in most Mexican homes.

Chilaquiles can be a healthy dish, if the tortilla chips are fried with healthy oils and a lean protein is used as a topping.

The reason chilaquiles taste so good is their combination of rich ingredients: fried chips, savory sauce and melty cheese. Consider lightening things up by balancing out those flavors with cooling sour cream, herbaceous cilantro, tangy pickled jalapenos or spicy radishes.

Ingredients

12 corn tortillas

Canola or avocado oil enough to coat the tortillas if baking or about two cups if frying.

For the sauce

3 roma tomatoes

1/3 onion white or yellow

2 guajillo chiles

2 or 3 chiles de arbol

2 garlic cloves

1/2 Tablespoon knorr chicken or vegetable flavor

1/2 teaspoon kosher salt

1 teaspoon dried oregano

1/2 teaspoon black pepper

Instruction

For the sauce
 
In a small or medium saucepan, add two cups of water, chilies, tomatoes, onion & garlic.
Over medium-high heat, bring the water to a soft boil, then lower heat to medium-low. Cook for 7 minutes or until tomatoes are soft.
 
In a blender, add one cup of the cooking water, the chiles, tomatoes, onion, garlic, bullion plus all of the spices. Puree for one or two minutes until everything is pureed well.
 
Add one tablespoon oil to a saucepan/skillet and heat over medium heat.
 
Add the puree carefully.
Turn the heat to low, and simmer, stirring often, for about 5 minutes, until the sauce darkens and thickens a little bit.
 
Taste and adjust salt & pepper.
 
For the Chilaquiles 
 
While the sauce is being prepared, fry or bake the tortillas.
 
Stir in the tortilla chips into the sauce pan and mix until the tortilla is coated with the sauce.
 
Remove from heat.
 
Serve immediately so that the tortillas chips don’t become too soggy.
 
You can drizzle with crema, sprinkle the cheese, and sliced avocado on the top.
