Sekuwa is meat roasted in a natural wood fire charcoal in a traditional Nepalese country style.

While the meat is still raw, it is mixed with natural herbs and spices and other ingredients.

Sekuwa can be made with pork, lamb, goat or chicken, or assorted meats. The Nepali Chicken Sekuwa is traditionally grilled over an open charcoal or wood fire. The cooking method creates a a juicy texture with a smoky flavour.

Sekuwa offer a large amount of protein, due to its main ingredient being meat. Proteins are made up of amino acids, which enable the body to build and repair muscles, and bones, as well as create hormones and enzymes.

 

Ingredients

To marinate the Chicken/pork/lamb/buffalo meat

Black pepper powder- ½ tbsp

Fresh ginger and garlic paste- ½ tbsp each

Lemon juice- 2 tbsp

Sichuan peppercorns (Timur)- ½ tbsp

Turmeric powder- 1 tbsp

Red Chilli Powder- 1 tbsp

Salt (preferably sea salt)- ½ tbsp

meat washed and cleaned diced in to one inch cubes

Garnishing Coriander leaves or cilantro- 2 tbsp chopped

Spring onions chopped

 

Instruction

Rinse the meat in water until clean.

Drain the water and put it in a clean bowl

Add ½ tsp of black pepper, 1 tsp of turmeric, salt and red chilli powder. Sprinkle Sichuan peppercorns (Timur) and mix well.

Add fresh ginger garlic paste and mix again. 

Cover the bowl with a cling wrap and set it aside for at least 2 hours.(overnight marination gives more flavor to the meat)

If you are using skewers, start stabbing meat pieces one by one. Do not over stab.

Lay skewers on the direct-heat side of the grill.

Space them out to let them cook evenly.

Don’t move them until the bottoms look slightly charred and they release easily from the grill.

Then, turn the sekuwa as necessary to sear all sides.

Once properly grilled, take out the pieces and place them on a plate.

Place chopped spring onions, chopped cilantro beside the sekuwa pieces.

Squeeze lemon juice all over the sekuwa pieces.

Serve with puffed rice, green salad, Tomato relish, beaten rice.

Note : Wrap in any lettuce leaf, add some Tomato relish or lemon juice. It will give you a very satisfying taste.
