French onion soup, or soupe à l’oignon gratinée, is a classic French dish made with caramelized onions and beef stock or broth. The soup is topped with bread and cheese, then gratinéed to rich, gooey perfection. It’s traditionally served in a ramekin or a ceramic crock with a handle.

Onion soups were known in France since medieval times, but the version now familiar dates from the mid-19th century. Its a highly nutritious soup and assuredly you’ll be pleased with the flavor.

Ingredients

For the French Onion Soup (Soupe à l’oignon):

50g butter

700g onions, thinly sliced

2 tbsp flour

1.5 litre beef or chicken stock

1 glass white wine (optional)

1 bay leaf

6 baguette

100g gruyère cheese, grated

salt (to taste)

Instruction

Heat a cooking pot and melt the butter and add onions.

Cook over low heat, stirring the onion frequently.

Once the onion is soft and deep gold in color, add flour and stir continuously for about 2 minutes.

Pour the stock and the wine (optional) onto the pot and stir well, add bay leaf and salt.

Cover the pot and simmer for 25 minutes and remove the bay leaf.

Scoop out into deep, heatproof bowls, place several thin slices of toasted baguette on to each bowl, then cover with thinly sliced Gruyère.

Bake in a preheated oven for about 20 minutes or grill until the bread is toasted and the cheese has melted and light browned. Serve warm.
