For the dressing
2 tbsp of honey
2 tbsp of lime juice
1-2 spoon extra virgin olive oil
pinch of salt
For the salad
1/2 watermelon cut into cubes
1 english cucumber cut into cubes
Fresh mint leaves chopped
Fresh basil leaves chopped
1/2 cup of Feta cheese cubes or crumbled
Instruction
Start with preparing the dressing: In a small bowl, whisk together the honey, lime juice, olive oil and pinch of salt. Set aside. In a large bowl or serving platter, combine the watermelon, cucumbers, and fresh herbs. Top the watermelon salad with the dressing and gently toss to combine. Top with the feta cheese and enjoy!!!
